Why we Pasteurise our Liquid Egg Products
The potential dangers associated with the large-scale commercial use by the bakery trade of untreated bulk supplies of raw, liquid whole-egg products have long been recognised. One of these dangers is Salmonella poisoning.
Pasteurisation is a process that destroys harmful accumulated bacteria, including Salmonella, and ensures a food safe product that has a shelf life as Freshly Pasteurised of 10 days. Once frozen after pasteurisation, it has a storage life of 1 year and thereafter a shelf life of the same as a ‘Fresh’ product, ie, ten days, once it has been thawed.
Pasteurisation Plant
The EggTech plant is one of only a few in the country and has the largest production capacity overall, offering pasteurised liquid egg, fresh or frozen. This includes
- Whole Egg Pulp
- Egg Yolk
- Egg-white (Albumen)
from one single high quality, food grade production facility. All eggs are broken, pasteurized, frozen, packaged and thereafter distributed nationally in South Africa, as well as exported.
Automated Process
Our process is highly automated, to the extent that, once the egg has started the pasteurising process, there is no further handling of the product until it is used by the consumer. The installation of our fully –automated bottling machine will be completed by the end of April 2019. This will enable us to fill 6 of our 5 L bottles within 30 seconds within the highest quality control levels.

Quality Assurance
Eggtech’s in-house Quality Assurance Laboratory is supplemented by scheduled outside laboratory back-up checks, and this process, overseen by our resident quality assurance team, ensures that the strictest standards for hygiene and quality are maintained, as well as the all-important consistency in product.
